Watermelon Basil Salad
Ingredients:
- Small seedless watermelon, chopped in cubes
- 2 large tomatoes, chopped. Use your favorite variety. Compari, Cabernet, Roma have great flavors.
- Fresh basil, chopped. Basil will be your “lettuce” of the salad. Use as much as you desire, but there is never too much!
- Fresh buffalo mozzarella cheese cubed small. Or use the small mozzarella balls. **
- 1/2 red onion, finely chopped
- 1/2 C fresh mint leaves
- 2 T. Of your favorite The Olive Tap’s100% Extra Virgin Olive Oil (Unflavored)
- 2 T. The Olive Tap’s Aceto Balsamic di Modena, 4 Leaf Quality
- Salt and pepper to taste
Directions:
Toss all chopped ingredients into a big mixing bowl.
Whisk together the 100% Extra Virgin Olive Oil, Aceto 4 Leaf Balsamic Vinegar, salt and pepper in a separate small bowl. Pour over salad and give it a good mix. Taste and adjust according to your tastes.
**Alternative cheese, try goat cheese instead of the buffalo mozzarella. The goat cheese will melt some giving the dressing a creamy texture.
