1. Start a pot of water for your pasta.
  2. In a preheated pan, add cooking olive oil, onions, garlic, parsley, red pepper flakes, salt, and pepper.
  3. Quarter or half the cherry tomatoes and add them to the pan.
  4. Mix and allow to cook down while you dice the zucchini.
  5. Add the zucchini to the pan and if needed add extra oil and salt and pepper.
  6. Boil pasta. When el dente, add to the pan and fold in.
  7. Finish with fresh grated parmesan cheese and drizzles of the Olive Tap’s Spicy Garlic Parmesan Olive Oil and the Fig Balsamic Vinegar.
